If there’s one thing that always helps me to get into the holiday spirit, it’s baking one of my favorite desserts: OREO Cheesecake Bites. To me, these are the perfect holiday treat because OREO cookies bring me back to being a kid and that nostalgia just gives me all the warm and fuzzy vibes that the holidays are about.
There are so many ways to enjoy OREO cookies – twist ‘em, dunk ‘em, just plain eat ‘em, or put ‘em in cheesecakes for this holiday recipe! Cheesecakes are the kind of dessert that are consistently a hit at any party no matter the time of year. By making them into mini cheesecakes with OREO crust to save you time, you won’t have to crush up anything for a crust.
Combining the two to make a holiday treat that’ll become a favorite of yours (and everyone else’s!) just makes sense. And speaking of holiday favorites, one of the things I love wearing this time of year are ugly Christmas sweaters. How ‘bout you?
All you’ll need to make OREO mini cheesecake bites are 5 simple ingredients that you might already have: OREO cookies, cream cheese, sugar, vanilla Greek yogurt, and eggs.
Being able to switch things up is why this recipe is perfect for the holidays! You can stick with original OREO cookies because most people love the classic cookie, but since Nabisco has come out with hella OREO flavors over the years, here are some fun swaps you can make:
Also, if you don’t want to use Greek yogurt for whatever reason, you can swap it out with sour cream.
Bring cream cheese, eggs, and yogurt to room temperature before mixing. This way you’ll have a more smooth cheesecake mixture without any lumps and it’ll be easier to mix everything together.
Don’t over mix the batter! Over mixing (or mixing on a higher speed) adds too much air which can lead to cracked OREO cheesecake bites. We def don’t want that!
To make these mini cheesecakes with OREO crust and topping, here’s all the kitchen stuff you’ll need:
Try these out for Thanksgiving and let me know how you like them; I bet you’ll wanna make them again for Christmas with one of my suggestions on how to switch it up!
